1.       Clear Dumplings with Shrimp and Pork (bánh bột lọc)

This dish includes dumplings made of manioc powder, lean pork, and shrimp (which remains available in all Huế markets). The attractive, transparent dumplings reveal a red shrimp and a slice of brown pork stuffed inside. The preparation is neither expensive nor time-consuming but does require proper experience. Huế residents serve bánh bột lọc with yellow bread crumbs, chilli sauce, and the stock from boiled shrimp, which is used for a specially prepared fish sauce.

2.       Traditional Noodle Soup (Bánh canh)

The image of women peddlers with baskets of bánh canh noodles from Nam Phổ Village of Phú Vang District is a familiar sight in Huế. A bowl of canh noodles includes rice noodles, shrimp, field crabs, fish, pigskin, onion, coriander, and pepper.
